Apple Crumbles

It started with a friend donating a half tub of crab apples. It seems that a lot of people can't be bothered doing anything with them...too small, or something. 


 Not me! I managed to make 3 pies (already in the freezer) plus 12 Crumbles out of the lot. Well 2 pies in the freezer, we had to "test" one. It passed!

I was out cutting off some leaves to let the sun at the pumpkins to try and accelerate the ripening. I just saw a big flock of Sandhill Cranes V'd up and heading south. It must be getting cold up north. We have come very close to frost the last few nights, like +2 C. Could it be they know something we don't?

Getting ready for Winter!

When the rhubarb is ready it is time to put some down for the winter. This is half the goal (one third if I feel ambitious).

Step 1 is to chop up the rhubarb

 Step to is to coat it with the crumble mix. I replaced the wheat flour with rice flower. It worked out great.
 Step 3 is to cook it for an hour and drive myself nuts with the aroma. I know, some might say it is a short trip.
Step 4 is to cover and seal with aluminum foil and freeze.

I made up two pans on Thursday and we had the Whitecourt family over. The two trays lasted no time.

With a double scoop of vanilla ice cream, there is not much better for a dessert. The best part is rhubarb just keeps coming up with next to no maintenance. My kind of plant!

Anybody feeling hungry, or drooling yet?
